Creamy Butternut Squash Pasta with Walnuts

Ingredients Preparing

Pasta, butternut squash, milk, light cream, onion, garlic, walnuts, butter, salt, black pepper, Parmesan cheese.

Steps

1. Peel, seed, chop and steam the pumpkin in a steamer.

2. Chop the onion and garlic and set aside.

3. Add the pasta to a pan of boiling water and cook for the time indicated on the packet, drain and toss in a little olive oil to prevent sticking.

4. Melt the butter in a frying pan and add the chopped onion and garlic.

5. Add the steamed pumpkin cubes and toss to coat.

6. Pour in the milk and light cream and cook over a low heat until thickened.

7. Blend the pumpkin puree until smooth and creamy.

8. Add the cooked pasta to the pumpkin puree and stir well so that the pasta absorbs all the flavour of the sauce.

9. Season to taste with salt and black pepper.

10. Chop the walnuts and sauté in a frying pan over a low heat.

11. Sprinkle the toasted walnuts over the pasta and sprinkle a little Parmesan cheese on top.
